It's Conch Season in Cayman and time to appreciate this amazing sea creature that’s part of our heritage and as important as coconut to traditional Caymanian cooking. Queen Conch, Strombus gigas, whose other Caribbean names are caricol, lambi and sea snail, was once so plentiful it was considered “poor man’s food” in Cayman. Along with green turtle, there seemed to be an endless supply of this mollusk until the last 20 years.
